- 1 chicken
- 3 TBS Olive oil
- 1 small onion, chopped
- 1/2 bunch cilantro, snipped
- 1 TBS cumin
- 1 TBS garlic pepper
- 2 tsp lemon pepper
- 1 TBS Worcestershire sauce
- 1 can Rotel*
- 1 can chicken broth
- 1 can beef broth
- 1 can stewed tomatoes
- Monterrey Jack cheese and tortilla chips for topping (optional)
- Boil and de-bone chicken (I recommend using a Rotisserie chicken, it is so convenient and tasty!)
- Saute onion in the Olive oil in the pot that you are using for the soup
- Add remaining ingredients and simmer 45 mins over medium heat
- Garnish with cheese and tortilla chips
ENJOY!!!
*Regular Rotel will make a pretty spicy soup. Mild Rotel works really well and still gives it enough of a kick!
