Chicken Tortilla Soup



  • 1 chicken

  • 3 TBS Olive oil

  • 1 small onion, chopped

  • 1/2 bunch cilantro, snipped

  • 1 TBS cumin

  • 1 TBS garlic pepper

  • 2 tsp lemon pepper

  • 1 TBS Worcestershire sauce

  • 1 can Rotel*

  • 1 can chicken broth

  • 1 can beef broth

  • 1 can stewed tomatoes

  • Monterrey Jack cheese and tortilla chips for topping (optional)



  1. Boil and de-bone chicken (I recommend using a Rotisserie chicken, it is so convenient and tasty!)

  2. Saute onion in the Olive oil in the pot that you are using for the soup

  3. Add remaining ingredients and simmer 45 mins over medium heat

  4. Garnish with cheese and tortilla chips

ENJOY!!!

*Regular Rotel will make a pretty spicy soup. Mild Rotel works really well and still gives it enough of a kick!
