This is an excellent recipe that is quick, easy, and DELISH! I have made this several times for pot-luck breakfast/brunches and it always gets great reviews. Sorry I don't have a picture to post... I am a long-time reader, first-time blogger :) I will get the hang of this blogging thing and start posting pics with my recipes.
Monkey Bread Bites
1/2 C granulated sugar
1 TBS ground cinnamon
1 (12 oz) can refrigerated biscuits (I used Pillsbury Grands but any type will work)
1/2 C plus 2 TBS butter
1/4 C firmly packed light brown sugar
1 tsp vanilla extract
1/2 C chopped pecans*(optional- I usually use walnuts or slivered almonds to save $$)
Foil muffin cups
Combine 1/4 cup granulated sugar and 1 TBS cinnamon in large bowl. Cut biscuits into six pieces and add to sugar mixture, toss and set aside
Melt butter in medium saucepan over medium heat. Add brown sugar and remaining 1/4 C granulated sugar stirring until sugar dissolves. Remove from heat; stir in vanilla and nuts*.
Spray foil muffin cups with cooking spray and place in muffin pan. Arrange 4 coated biscuit pieces in each muffin cup. Drizzle evenly with sugar mixture.
Bake at 400 degrees for 18 minutes or until golden.
